Learn about Champagne Hervieux-Dumez
The story of Hervieux-Dumez begins in 1920, in the village of Sacy. Henri Hervieux settled there after serving in the First World War and married Juliette Dumez, whose family had worked those vineyards for generations, and together they founded the house. In the 1950s their son André turned the family farm’s focus to the vines, and in the 1970s and ’80s brothers Bruno and Laurent refined the balanced, elegant style the house is known for. Today Laurent, Clément and Timothée carry it forward as the fourth generation of independent growers.
The family farms 9.6 hectares spread across roughly 50 small plots in the Premier Cru villages of Sacy, Chamery, Ecueil and Villedommange, where the soils are a mix of chalk, clay, silt and sand. As a récoltant-manipulant, or grower-producer, Hervieux-Dumez grows all of its own grapes and makes every bottle in house, from the vineyard to the cellar.
That care for the land shows in how they farm. The family uses no insecticides, has kept beehives among the vines since 2020, and plants hedges and cover crops to support biodiversity, returning vine cuttings to the soil as they go. The house is also a member of the Club Trésors, a group of Champagne growers dedicated to high-quality farming and winemaking.
